Wild Blueberry – Quinoa Pancakes

This is a healthy, protein-filled snack.  Enjoy it for breakfast or on-the-go!


  • 1-1/2 cup cooked quinoa
  • 3 whole eggs (or 2 whole eggs + 2 egg whites)
  • frozen wild blueberries
  • cinnamon or vanilla


  1. Combine the cooked quinoa and eggs. Whisk until well blended.
  2. Add blueberries and cinnamon.  Gently stir.
  3. Lightly oil a pan and preheat on medium.
  4. Drop by large tablespoons onto pan.  Cook until bottom is lightly brown.  Flip and cook the other side.
  5. Top with fruit, fruit preserves, honey or maple syrup, or enjoy plain.
