Wheat berries with Black Beans and Corn

A simple, yet nourishing dish.  Wheat berries are a whole grain with a nutty flavor.  They can be added to soups or salads, or as a side dish.  Make it your own with the vegetables you have in your refrigerator.  Here’s my version – enjoy!

INGREDIENTS

  • 1 cup Wheat berries
  • Black Beans
  • Corn
  • Scallion, chopped
  • Shallot, chopped
  • Carrot, shredded
  • Cilantro, chopped
  • Red wine vinegar
  • Salt & Pepper

DIRECTIONS

  1. Toast wheat berries in oven at 375 for 10 minutes.
  2. Place toasted wheat berries in sauce pan with 3 cups of water.  Bring to a boil, then reduce to simmer and cover.  Simmer for 30 minutes, or longer, until wheat berries are chewy but not tough.  Drain then season with a little olive oil and salt.
  3. Add remaining ingredients to wheat berries.  Season with red wine vinegar, salt and pepper.
