I picked this up from AllRecipes.com and tweaked it a bit. Both kids ate it (and liked it). Enjoy!
Prep Time: 15 min.
Cook Time: 35-45 min.
3-4 cloves minced garlic
6 tblspns olive oil
1 tspn dried basil
1 tspn salt
1 tspn ground black pepper
1 tblspn lemon juice, plus more to garnish
1 tblspn fresh parsley, chopped
1 (6 oz) salmon fillets
In a glass bowl, prepare marinade by mixing garlic, olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
Preheat oven to 375 degrees F.
Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35-45 minutes, until easily flakes with a fork.
