Quick Collard Greens

Ingredients:

  • 1 pound collard greens, chopped

Dressing Ingredients:

  • 1 tsp lemon juice
  • 1 clove garlic, chopped
  • 1 TBS extra virgin olive oil
  • sea salt and black pepper to taste
  • 1-1/2 tblspn sunflower seeds

Directions:

  1. Steam collard greens for 5 minutes, then transfer to a bowl.
  2. Combing dressing ingredients in a separate bowl.
  3. Add collard greens to the dressing.
  4. Add any optional ingredients while the greens are still hot.

Optional:

  • 1/2 red onion, sliced (add to steamers with collard greens)
  • kalamata olives, sliced
  • 3 tblspns pumpkin seeds
  • soy sauce
  • dash of cayenne pepper
