Quick Cod

I threw this together the other night – couldn’t have been easier. And both kids enjoyed it 🙂


  • Plain Breadcrumbs
  • Fresh Dill
  • Garlic Cloves
  • Lemon Zest
  • Salt
  • Cod Fillets
  • Extra Virgin Olive Oil


  1. Preheat oven to 400 degrees. Line a pan with aluminum foil and brush with olive oil.
  2. Combine dill, garlic, lemon zest and salt. Chop until well combined.
  3. Add breadcrumbs and mix well.
  4. Brush cod fillets with olive oil, then coat with dill/breadcrumb mixture.
  5. Place in oven for 15 minutes, or until firm.
