Parmesan Chicken

  • 1-2 tblspns extra virgin olive oil
  • 1 egg
  • whole wheat bread crumbs, or whole wheat panko
  • grated parmesan cheese
  • whole wheat flour
  • boneless, skinless chicken breasts (thin works best)


  1. On medium heat, warm the olive oil in a large pan.
  2. In a bowl, beat the egg and add a tablespoon of water.
  3. In a separate bowl, combine the bread crumbs and the parmesan.  Add salt and pepper, oregano or basil here.
  4. Dredge the chicken in whole wheat flour.
  5. Next, dip the chicken in the egg mixture.
  6. Finally, coat the chicken in the bread crumb – parmesan cheese mixture.
  7. Place the chicken in the pan and heat on each side until cooked through.  Keep warm in 200 degree oven until ready to serve.
