Dry Rub Spice Chicken

Here’s another simple, healthy recipe.  Quick to prepare and 15 minutes on the grill.

Prep Time: 15 min.
Cook Time: 15 min.

Ingredients:

  • 1 1/2 tblspns paprika
  • 1 1/2 tblspns ground cumin
  • 1 tspn dried oregano
  • 1 tspn ground coriander
  • 1/2 tspn crushed red pepper flakes
  • 1 1/2 tspn kosher salt
  • boneless, skinless chicken breasts
  • extra-virgin olive oil

Directions:

  1. Combine the spices in a jar.  They’ll keep for up to six months.
  2. Drizzle the chicken with the olive oil.  Rub the spice mixture on the chicken.  Let stand for 10 minutes, while heating the grill or grill pan.
  3. Cook over medium-high heat for 6-8 minutes per side.
