Delightful Minestrone Soup

Serves: 6

Don’t be scared off by the number of ingredients – this comes together quickly and is worth it!



  • 2 tblspns olive oil
  • 1 large onion, diced
  • 4-5 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 large or 2 small carrots, diced
  • 1 1/2 cups green beans, cut into 1/2 inch pieces (and steamed, if desired)
  • 1 tspn dried oregano
  • 1 tspn dried basil
  • Salt & freshly ground pepper
  • 1 28-oz can diced tomatoes
  • 1 14-oz can crushed tomatoes
  • 6 cups vegetable or chicken broth
  • 1 15-oz can kidney beans, drained and rinsed
  • 1 cup whole wheat elbow pasta
  • parmesan cheese
  • basil, freshly chopped


  1. Heat the olive oil in a large pot over medium heat.  Add the onion and cook until softened.  Add the garlic and cook 30 seconds.
  2. Add the celery and carrot and cook until softened, about 5 minutes.
  3. Stir in the green beans, dried oregano and dried basil, salt and pepper to taste and cook 3 more minutes.
  4. Add the diced and crushed tomatoes and the broth to the pot.  Bring to a boil.
  5. Reduce the heat to low and simmer 10 minutes.
  6. Stir in the kidney beans and pasta and cook until the pasta and vegetables are tender, about 10 minutes.
  7. Top with parmesan and chopped basil.
