Chickpeas & Spinach

I love this recipe – simple and healthy.  It has cumin and turmeric – both great for fighting inflammation.  A delicious side dish, with chicken or fish.

Prep Time: 10 min.
Cook Time: 20 min.
Serves: 6

Ingredients:

  • extra virgin olive oil or vegetable oil
  • 1 onion, chopped
  • 1 cup chopped tomatoes
  • 3 tspns ground coriander
  • 1 1/2 tspns ground cumin
  • 1/4 tspn garam masala
  • 1/4 tspn turmeric
  • 1 can chickpeas, rinsed, 15 oz
  • 1 tspn salt
  • 1 package frozen chopped spinach, 10 oz

Directions:

  1. Heat oil in a large skillet.  Sauté the onion and cook until softened. 
  2. Stir in tomatoes, coriander, cumin, garam masala and turmeric.  Lower the heat and cook for a few more minutes.
  3. Add in chickpeas and salt.  Cook until heated through, about 5 minutes.  Add spinach and cook  for another 5 minutes.
