Carrot & Sweet Potato Soup


  • 1 tblspn olive oil
  • 1 cup minced onion
  • salt & pepper
  • 1 tblspn minced garlic
  • 4 cups diced sweet potato
  • 2 cups diced carrot
  • 6 cups vegetable or chicken stock
  • 1/4 tspn celery seeds
  • 1 tspn cumin
  • fresh chopped herbs (cilantro, parsley, mint)


  1. Heat the oil in a large pot over medium heat.
  2. Add the onion.  Add salt and pepper and sauté until onion softens.
  3. Add garlic and stir to combine.
  4. Add sweet potatoes, carrots and stock.
  5. Turn up the heat and boil, then reduce to a simmer and cook until vegetables are soft.
  6. Purée with an immersion blender to a counter-top blender in batches.
  7. Serve with a sprinkle of fresh chopped herbs.
