Black Bean Dip

Prep Time: 5 minutes
Serves: 6-8 people

  • 1 plum tomato, diced
  • 2-4 tablespoons diced red onion, depending on taste
  • 2 cloves garlic, chopped
  • 1 tablespoon cilantro, chopped, plus sprigs for garnish
  • 2 (15-ounce) cans black beans, drained (save liquid in case it’s needed)
  • 1 tablespoon ground cumin, or more to taste
  • 2 teaspoons hot sauce
  • salt
  • vegetables, for dipping

  1. Place the tomato, onion, garlic and cilantro into the food processor and pulse until well chopped.
  2. Add the black beans, cumin, hot sauce and salt and pulse until the mixture is mostly smooth.
  3. Taste and add more hot sauce if needed. If dip is too thick, use some of the reserved black bean liquid and pulse until combined to desired consistency.
  4. Garnish with cilantro sprigs.
  5. Dip carrots, celery, cucumbers, jicama, peppers, etc and enjoy!
