Bean Chili

This hearty recipe came together quickly. Remember that you can buy several of the vegetables already chopped.

Makes 6-8 servings

INGREDIENTS

  • Extra-virgin Olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • Cumin
  • Chili powder
  • Oregano
  • 2 Carrots, diced
  • 2 Peppers, diced
  • 3 stalks Celery, diced
  • 2 cans o Tomatoes, 28-oz
  • 2 cans of Beans (kidney, black or white) drained & rinsed
  • Corn, frozen is fine
  • Salt

PREPARATION

  1. Heat oil in large pot. Add onion and sauté, then add garlic. Add cumin, chili powder and oregano and cook, briefly.
  2. Add carrots, peppers and celery and cook until softened. Add tomatoes and their juices. Bring to a simmer. Reduce heat to medium-low.
  3. Cook for 20 minutes. Add beans and corn until heated through.
  4. Add salt to taste.
  5. Top with sour cream, cheese, avocado or cilantro. Enjoy!
